Añana Chuzos are thin stalactites that originate in a natural manner in areas of the valley where the brine flows in overhead ducts. What, in the past, was considered a construction error, due to the undesirable seepage of salt water, has now become a prized object of desire.

Its value lies in the fact that it is a very high quality although scarce and unique product. Chuzos are picked by hand, one by one, from under the wooden structures of this unusual cultural landscape.

Due to the fine and compact texture of the stalactites, they dissolve in the mouth very quickly. Thus, the palate immediately receives a clean and long-lasting salty flavour. Sensory analyses carried out by the University of the Basque Country indicate that this is one of the best salt products in the world.
